Olive Chicken Gravy:

  • 500g chicken
  • 3 tsp olive oil
  • 2 chopped onions
  • 2 tsp freshly grated ginger
  • 2 tsp freshly grated garlic
  •  3tsp  turmeric powder
  • Chopped coriander leaves
  • Chopped mint leaves
  • 2 tsp chilly sauce
  • 1 cup chicken stock
  • 1/3 cup coconut milk
  • Salt to taste

Method:

 Take the chicken pieces and coat them with turmeric powder and leave it for 15 minutes. Heat the pan pour olive oil and add the chicken pieces leave it for 2-3 minutes over medium heat, till the pieces turn golden brown. Now remove them form the pan. Pour some more olive oil in the same pan and add onion and ginger-garlic paste and leave it for 5-6 minutes. Add chilly sauce, chicken stock and coconut milk mix it well and add chopped coriander and mint leaves. Finally, add the chicken pieces and simmer on a low flame for abut 40 minutes. Add salt to taste. Now serve with ghee rice.
